Site, Vineyard and Soil Ried Kräutergarten in Oberwaltersdorf, meagre alluvial soils with high limestone content.
Description Dark ruby red with blue highlights. An intense aroma of dark berries, blackheart cherries, bitter chocolate and black tea. A great deal of ripe fruit on the palate; dark cherries, blackberry compote and plums, paired with delicately bitter chocolate and subtle herbal notes. Wonderfully juicy!
Food Pairing With steak frites, smoked duck breast with fruit, liver paté with raisins marinated in rum, braised beef with rosemary.
Serving temperature 14 - 16 °C (57 - 60 °F)
Vinification Harvested by hand, 80 % destemmed and crushed, 20 % whole berries.30 % spontaneous fermentation, 70% fermented with cultured yeast. Fourteen days on the skins, then pressed gently. Élevage 40% in used barriques (3rd–5th filling) and the rest in stainless steel, for eight to twelve months. Acidity 5,1 g/l, Alcohol 12,5 % Vol., Residual Sugar 4,4 g/l
