Kräutergarten in Oberwaltersdorf, meagre alluvial gravel with a very high limestone content, a lot of large pebbles at the surface.
Dark ruby red colour, black-blue highlights. In the nose, blueberries and prunes, fruit preserved in rum, menthol and delicate echoes of elderflowers. On the palate a lovely arc of acidity; blueberry confit, fully ripe sun-warmed raspberries couple with a whiff of bitter chocolate and tobacco. Subtle toasted aromas.
With a braised saddle of lamb and rosemary potatoes; venison steaks or roasted loin, red onion confit, polenta.
16 – 18 ° C (60 – 65 °F)
Selective hand harvesting, the ripest and loveliest clusters. 50% destemmed and crushed, 50% whole berries. Cold maceration at 8°C for five days. Fermentation with natural yeasts, pressed after eighteen days fermenting. Élevage 100% in barriques for 16 months, of which 30% new wood, the rest in 2nd and 3rd filling.
Acidity 4,7 g/l, Alcohol 13,5 %, Residual Sugar 2,9 g/l
