Site, Vineyard and Soil Kräutergarten in Oberwaltersdorf, meagre alluvial gravel with a very high limestone content, a lot of large pebbles at the surface. Description Dark ruby-red colour, with blue/black highlights. In the spicy nose there's a complex mixture of blackberries, cherry compote and a bit of brushwood. The wine has a fascinating and exotic wild streak to it - a truly distinctive and distinguished personality, pleased to introduce itself... The palate takes an elegant form, with a challenging structure and very finely grained tannins; blackberry confit, sour cherries, bitter chocolate and the characteristic white pepper. There is a subtle note of black tea in the long finish, coupled with an alluring minerality. Food Pairing Serve alongside a braised saddle of lamb and rosemary potatoes, or a venison ragout with blackberries, pappardelle pasta and haricots verts. Serving temperature 16 - 18 °C (60 - 65°F) Vinification Selective hand harvesting, the ripest and loveliest clusters. 50% destemmed and crushed, 50% whole berries. Cold maceration at 8°C for five days. Fermentation with natural yeasts, pressed after eighteen days fermenting. Élevage 100% in barriques for 16 months, of which 30% new wood, the rest in 2nd and 3rd filling.
